Today’s wine comes from the Collio DOC, a hilly appellation in the Friuli wine region of north-eastern Italy. Lightly aromatic, unoaked white wines with a balance of fresh fruit and minerality are a specialty. The indigenous varieties of Friulano and Ribolla Gialla thrive here. A unique Mediterranean-meets-Alpine climate lends local character to international varieties like Chardonnay, Pinot Grigio, and Sauvignon Blanc.
Tasting Cormòns Sauvignon
This Sauvignon Blanc is restrained and perfectly summery, with white pear, firm white peaches, and very subtle grassiness on the nose. The palate is citric and mineral-driven, with medium body and acidity. A touch of creamy almond and chamomile round out a clean finish.
The wine has an appealing balance of flavors that don’t compete with each other or try to outshine the food. I paired it with a Mediterranean-inspired chicken plate with fresh Bing cherries.
